Ingredients

Leftover chicken from satay
Leftover peanut butter sauce from satay
Ginger
½ onion
1 clove garlic
1 jalapeno
2 carrots
½ sweet potato
1 c. green beans
Chicken stock
Some tomato paste (tube is easiest)
Cayenne
Nutmeg

Cooking Instructions

Chop onion, garlic, about ½ an inch of garlic, and as much jalapeno as you want. Saute in small saucepan in some olive oil.
Chop the carrots and sweet potato into small cubes. When the onion is soft, add the carrots and some chicken stock. Simmer for five minutes. Add the sweet potatoes. Cook for about 10 minutes.
While it’s cooking, chop the leftover chicken into small chunks. Add a teaspoon or so of tomato paste, cayenne, nutmeg and chicken. Simmer for about 10 minutes. Stir in the leftover peanut sauce. If using frozen green beans, add and warm. If using fresh, add and cook until just tender. Serve.
