4 Chicken Breasts

Cut chicken breasts in half (height-wise, so that you have two thinner chicken breasts). Slice them into 4 inch pieces. Combine in a bowl with the juice of one lime, a smashed clove of garlic and a bit of grated ginger. Let it marinate for 5 minutes.
Whisk together half a cup peanut butter with the juice of half a lime, a splash of soy sauce, a pinch or two of red chile flakes, a dab of honey, and enough water to make a smooth sauce. Taste and adjust seasonings. Set aside most of the sauce for dipping.
Smear some peanut sauce on each piece of chicken. Salt and pepper. You can thread these onto skewers and grill; or put them on a baking sheet and broil them in the oven for about 10 minutes, turning over after the first five minutes.
Serve with peanut sauce.
