1/2 cup chopped dates
1/4 cup water
1 tsp local honey
1 cup oatmeal
1/2 cup Garbanzo Beans Flour (in "natural" section of store)
1/2 tsp baking soda
2-3 dashes of salt
1/5 stick of butter, melted
1/2 egg white
2 Tb honey
This recipe totally takes advantage of the inclusion of oatmeal in the new Challenge. Thanks James for that!
In small saucepan, combine the dates, water and honey. Cook and stir until mixture comes to a boil. Reduce heat; simmer, stir until mixture becomes thick.
In separate bowl, combine oats, GB flour, baking soda, and salt. Stir in melted butter, egg white, and honey until blended.
Pat half of the oatmeal mixture into a Pam-sprayed small pan (4/6ish) (a small glass pyrex is what I used). Carefully spread date mixture over that, and pat remaining oat mixture ocer date mixture.
Bake at 325 for 15-20 minutes or until lightly browned.
Cool, and cut into 8 bars.
p.s. it's true the Garb beans flour sounds really crazy. But trust me. It tastes great. I was shocked. (the ingredients listed in the Garbanzo beans flour: 1 thing. Garbanzo beans. that's it).
