Ingredients (10 muffins):
Frozen or Fresh Blueberries (60g = 0.3C)
Old fashion oat meals (116g = 7.7C)
Apple Sauce (134g = 2C)
Egg (2 = 2P)
Topform Protein Powder (Vanilla favor) (88g = 8P)
Olive Oil (1TPS = 10F)
Baking Soda (1/2 tsp)
Baking Powder (1/2 tsp)
Vanilla extract (optional) (1 tsp)
1. Oil a muffin tin if necessary.
2. Drop 4 or 5 blueberries in each cup. Make sure each cup holds the same amount of blueberries. (Used 10 muffin cups.)
3. Measure the weight of your mixing bowl.
4. Mix eggs and apple sauce together in the bowl.
5. Add oat meals and protein powder and mix together.
6. Add olive oil and vanilla extract and mix together.
7. Add baking soda and baking powder. Lightly Mix them into the mixture like cutting into. Do not mix to much. (If mix too much, it might be less fluffy.)
8. Weight the entire bowl with muffin mixture and subtract the weight of the bowl from it. Then divide the final mixture into 10 equal amount.
9. Put the divided mixture in each cup. (Usually my each muffin mixture ends up to apx 45-47g).
10. Use a chopstick or a small spoon and mix blueberries and muffin mixture together. So blueberries will not end up in the bottom of a muffin.
11. Bake them in 400F oven for 10 minutes.
12. Stab a muffin with a toothpick. If the toothpick is not wet, then it is ready.
13. Take muffins out from the tin and put them on the mesh rack to cool them.
