Ingredients

1 lb ground beef (12 P)
4 peppers = 4C
1/2 onion = 1C
garlic
olive oil
1 c. green beans = 1 C
1 1/3 c. cooked spinach = 1 C (I put in 4 cups raw)
1 jar Newman's Own spaghetti sauce (I used fire roasted tomatoes & garlic) it doesn't have sugar.

Cooking Instructions

Preheat Oven at 350 Degrees.

1. Brown ground beef in a pan,(I added some spices) drain and set aside.

2. Cut tops off of peppers, clean out inside, put in steamer, opening down, steam until tender-crisp.

3. Saute onion and garlic in olive oil.

4. Chop usable portion of pepper tops, add to onions
cut green beans into small chunks and add to pan
when those are a bit soft, add spinach and cook until done
remove from heat, stir in most of the spaghetti sauce, reserving some for the top.

5. stir it all together, taste, correct seasonings (salt, pepper, Italian seasonings.

6. Stand peppers up in casserole dish, heap filling inside, top with a bit of the sauce. If you want to, top with cheese, you can also add some chopped nuts.

7. Cover (with lid or foil, if using foil, spray with pam)
Bake at 350 for half an hour then remove lid/foil, bake until cheese is bubbly.
